Synopsis – What to Expect from “Forks Over Knives”
Forks Over Knives is a 2011 documentary film that examines the profound claim that most, if not all, of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting animal-based and processed foods. The film follows the journey of two food scientists, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn, as they explore the idea that a plant-based diet is the key to health and longevity.
The film begins with interviews of people who have benefited from a plant-based diet, as well as interviews of physicians and researchers who have studied the effects of diet on health. It then examines the research of Dr. Campbell and Dr. Esselstyn, which has concluded that the consumption of animal-based and processed foods is the primary cause of degenerative diseases such as coronary heart disease, diabetes, and cancer.
The film also examines the research of other doctors and researchers who have come to similar conclusions, as well as interviews with people who have adopted a plant-based diet and have seen remarkable improvements in their health.
Forks Over Knives ultimately concludes that a whole-food, plant-based diet is the key to health and longevity, and encourages viewers to make the switch to a healthier way of life.
